Custard Cream Puffs
Springy choux pastry with freshly made custard cream

I've been dying to make my own custard cream puffs for ages but I just didn't have the time or the guts to do it until today. Everything you see on the plate is freshly made by yours truly. Here i would like to share the recipe. Go on try it. You will never want to get them from a bakery again as they simply taste waaaaaaaaaaaaayyyy better. :) Honestly. 

The Recipe
Choux pastry
ingredients
  • 250ml water
  • 125gm plain flour
  • a pinch of salt
  • 100gm butter
  • 3 eggs
  • 1/2 tsp castor sugar

  1. sift the flour together with salt. put aside.
  2. bring to boil water, butter and sugar, turn down the heat then pour in the flour and salt mix. 
  3. stir vigorously until it becomes the whipped potato consistency and the dough doesn't stick to the pan.
  4. remove from heat and let cool for about 10-15 minutes.
  5. add eggs one by one, you can use electric mixer to save time and energy. make sure everything is incorporated and the dough will be a bit elastic and shiny.
  6. pipe the dough onto lightly greased pan (any size you like). try not to make them too big because they will expand quite a bit due to the eggs in the dough.
  7. bake in the 200C oven for 20-25 minutes. 
  8. cool them on the wired rack.

Custard Cream
ingredients
  • 1 tbs plain flour
  • 1 tbs corn flour
  • 3 tbs castor sugar
  • 1 cup fresh milk
  • 1 egg
  • 1 tbs butter

  1. combine all the ingredients (except butter) in a saucepan.
  2. stir so that there are no lumps in it.
  3. put the saucepan on the stove and stir the mixture on medium heat. (never stop stirring as it will be lumpy even when you stop for a few seconds)
  4. keep on stirring until cooked (you will know it's cooked when you have a creamy custard and it lost it's flour flavour.
  5. remove from heat and stir in butter. continue stirring until it is smooth and silky.
  6. pipe the cream into the cooled puff.
