Baked Mac and Cheese in Curry Mince Sauce
I was too bored yesterday. Not that i didn't have anything to do... but i just didn't have the patience to do it. So, i decided to make this Malaysian style baked mac and cheese. I've been making other versions of this but by far this is the best. (it tastes so much better when it's cooled and rested, preferably overnight). :D But if you wish to have this for tea or maybe dinner, try to make it in the morning, so it will have ample time to rest and cool. Things You Need...
1. 250 - 300g macaroni (cooked as you normally would)
Ingredients A:
1. 400g minced meat.
2. 2 onions - diced
3. 2-3 cloves of garlic -diced
4. 1 small packet of chicken curry powder (I prefer Alagappa brand)
5. A few pinches of salt to taste.
6. Some oil for cooking
Ingredients B:
1. 1 cup of milk
2. 4 eggs
3. Some spring onions - finely chopped
4. Salt and a bit of sugar to taste
5. Cheese (cheddar, parmesan, mozzarella, whatever you like) how much you ask? As much as you prefer. :D
Now let's get cookin' ;)
1. Saute onions and garlic until fragrant.
2. Add in the curry powder and keep stirring as it can burn ever so easily (if it's too dry, add a few tablespoons of water.)
3. When fragrant, add the meat and stir until cooked. Pour in the cooked macaroni and mix well.
4. Transfer the macaroni mix into a baking tin.
5. Combine all ingredients B in a separate bowl and pour the mixture onto the macaroni mix in the baking tin.
6. Bake in 180 - 200 degree celsius for 30-40 minutes.
7. When it's cooked, cool it on the cooling tray.
P/S:
- I know you'll be tempted to dig in, but patience is needed here because as it cools, it'll set better and taste better too.
- If you prefer it hot, you can add some chilli paste or some sliced chillies while sauteing the curry powder. Or you can pour some chilli sauce onto it when you eat. YUM!!!~ :D
